My "World's Best Crawfish" may very well be the best thing to come out of the pandemic! While thinking of any idea to increase our hard hit business while I was working at B-mac's French Quarter Bar and Courtyard, The idea to host a mid-week boil came to me. I've been doing backyard boils for years, but never really considered boiling for anything except FUN. It was an immediate hit. Gaining in popularity to the point I had to bring in friends to help! Well, the season ended and I changed careers over the summer and I largely forgot about boiling. As the new season approached, my friends, family, and fans started asking me if I was going to start up my boil again! Well, the answer is "YES"! And as the saying goes... "The rest is history."
I LOVE Crawfish! But the Universe has a sick sense of humor and gave me a medical condition, Ménière's Disease, that gives me dizzy spells when I eat a high sodium diet. We all know that Crawfish are very salty. I could not even enjoy my own boils! Something had to give. I had to change the way I seasoned my MudBugs. Well, it took several weeks, but a little tweak here and there and bringing in flavors from fresh ingredients other than salty mixes, I finally made a boil that has all (If not more) the flavor with only half the salt! Then I started winning!
Anyone that knows me, knows I'm an environmentalist. I bring my own bags to the grocery, decline straws in my cocktails at the bar, "Extreme Recycling" (inside joke), and even make my own compost at home. That being said, Pop-up Crawfish, pop-up food in general, produces a lot of trash! starting this season, I will be serving my boils on reusable plastic trays, rather than the default Styro box. Of course, I will offer To-Go boxes for take away orders and those of you that just prefer one, but reusable trays will be the go to. Additionally, I will be sourcing produce as locally as possible and looking into bulk seasoning to reduce plastic containers!
You all told me they were the best. I knew they were good. So, I entered a competition and brought home the gold! Well, this beauty above anyways. 1st place at the inaugural Crawfish Cookoff at Old Arabi Bar! With judges including Natasha Robin from Fox 8 News and Desi Vega, best known for his steakhouse. Now, to go and defend this title of "The World's Best Crawfish"!
Getting ready
